Easy Low Carb Beef Enchiladas
This super easy Low-Carb Beef Enchiladas recipe can be prepared in advance or whipped up for dinner within 45 minutes (with bake time). I prepared mine in the morning, set it in the fridge for the day, then baked it 30 minutes before dinner time. It is also freezer-friendly!
It’s great for family’s on the go, like me, and for those looking for a healthy substitute to flour tortillas. And with only 6 ingredients, it’s a fairly affordable family meal!
With 17g of total carbs (or 13g net carbs) per enchilada, you might consider this too high for Keto but it definitely counts as low-carb. I used Joseph’s Lavash Bread Flatbread for my “tortillas” but cutting them in half, they make a generously sized enchilada. However, you could even cut these into 1/4ths for small enchiladas which would reduce the carbs.

Easy Low Carb Beef Enchiladas Recipe
Ingredients
- 4 Joseph's Lavash Bread Flatbread (cut in 1/2)
- 1 lb(s), Ground Beef
- 1/2 cup, Enchilada Sauce
- 1/2 cup, shredded Cheddar cheese
- 1/4 cup, chopped raw onion
- Chopped cilantro, optional
Instructions
- Preheat oven 350 and lightly spray a glass casserole dish with cooking spray.
- Brown and crumble meat on the stove top, add chopped onions and 2 Tablespoons of the enchilada sauce to the beef.
- Cut each of the flatbread in half to create 8 "tortillas." Add a scoop of the beef mixture the the middle of each tortillas and roll. Place enchiladas lined up into the glass dish.
- Top enchiladas with the remaining enchilada sauce, then the shredded cheese and chopped cilantro (optional).
- Bake for 15 minutes or until bubbly.
