I eat dessert for breakfast.  This creamy fruity dessert makes the perfect breakfast treat, although it stands at 16g carbs per serving, net carbs come in at only 9g for those calculating net carbs.  Stick to the serving size if you are doing Keto so you don’t go over!  The good fat content is high at 28g but the protein stays low at only 4g so this isn’t a regular treat unless you are a THMer or have been maintaining weight loss.  It still offers a dessert satisfaction for Keto eaters!

I actually made this a few years ago for Thanksgiving and it was a hit even for those that weren’t healthy eating, it reminds me of the Strawberry Pretzel Salad from my carb-eating days!  You can cut this is half too if you want to resist eating more than needed, but if you have a family or group to feed, this is pretty good!

  • 1 1/2 cups almond flour
  • 4 1/2 tablespoons Splenda
  • 3/4 cup butter, melted
  • 1 tsp salt
  • 1 cup Splenda
  • 2 cups heavy whipping cream
  • 2 (8 ounce) packages cream cheese
  • 1 (6 ounce) package sugar free Jello brand raspberry flavored gelatin
  • 2 cups boiling water
  • 1 (12 ounce) package frozen raspberries
  • 8 ounces of cranberries (chopped)


  1. Preheat oven to 350 degrees F.Mix together the almond flour,1 tsp salt, 4 1/2 tablespoons Stevia and melted butter. Press into the bottom of a 9x13 inch pan. Bake for 10 minutes, or until lightly toasted. Set aside to cool completely.
  2. In a medium bowl, whip the heavy whipping cream until peaks form. Beat in the 1 cup Stevia and cream cheese until smooth. Spread evenly over the cooled crust. Refrigerate until set, about 30 minutes.
  3. In a medium bowl, stir together the gelatin mix and boiling water. Mix in frozen raspberries and chopped cranberries then stir until thawed. Pour over cream cheese mixture in pan. Refrigerate until completely chilled, at least 1 hour.
