My Favorite Keto Pancakes – recipe

March 12th is National Pancake Day!  While I won’t be running to IHOP to get my carb-load on, I’ll definitely consider making some of my favorite low carb pancakes at home!  These pancakes help me not miss bread so much and doused in some sugar-free syrup or homemade fruit topping and lots of butter, it makes me feel like I fit right back into the world of carbs.

I’ve tried a lot of recipes and this one is by far the best.  I usually just make a batch of these to feed my husband and I (the kids are non-keto), typically these makes 4-6 pancakes for us.

My Favorite Keto Pancakes – recipe


  • 2 eggs
  • 2 oz cream cheese
  • 1/2 tsp Vanilla extract
  • 1 tsp sweetener substitute
  • 1/4 cup almond flour
  • 1/2 tsp baking powder.


  1. Warm a skillet over the stove top on medium heat.
  2. In a microwavable bowl, slightly melt the cream cheese in microwave until softened and stir able.
  3. All all other ingredients and mix until blended.
  4. Add oil to your skillet and pancake batter (amount to your liking) to make pancakes. Flip as needed.
