March 12th is National Pancake Day!  While I won’t be running to IHOP to get my carb-load on, I’ll definitely consider making some of my favorite low carb pancakes at home!  These pancakes help me not miss bread so much and doused in some sugar-free syrup or homemade fruit topping and lots of butter, it makes me feel like I fit right back into the world of carbs.

I’ve tried a lot of recipes and this one is by far the best.  I usually just make a batch of these to feed my husband and I (the kids are non-keto), typically these makes 4-6 pancakes for us.
