I got an Instant Pot for Christmas!  I tried the water test and then ventured out and made hard-boiled eggs – both with no problems!  So then I decided to go out on a limb and create my own instant pot recipe for the first time.  It was a little gutsy, but why not!?  It turned out awesome!  I’m so excited about it that I’m sharing my recipe and instant pot instructions with you.  If you love meat and cheese, you’ll love this recipe!  It’s definitely a keeper for those “meat and potato” fellas in your life!


Turn the Instant Pot on to Saute. Add butter and saute onions and celery. Turn off the Saute on pot and add broth and potatoes.

Put the lid on the IP and close steaming valve. Set the IP to Soup mode for 20 minutes and start. After 20 minutes, press the “Keep Warm/Cancel” button and release the steam.

Remove the lid and add all other ingredients. Place the lid back on the IP in the “Keep Warm” mode and let sit until cheese is melted (about 20 minutes). Stir and serve. (Side note: is so much better the next day so make in advance to serve the following day!).
